    Creamy Dill New Potato Casserole

    Source of Recipe

From "My Southern Food" by Devon O'Day

    List of Ingredients

    • 12 to 16 medium new potatoes
    • 1 cup sour cream
    • 1 stick butter, melted
    • 1 tsp dried dill
    • 1 tsp salt
    • ½ tsp pepper
    • 8 slices bacon, cooked and crumbled
    • 2 cups shredded Cheddar cheese

    Instructions

    1. Wash, boil, and cut the new potatoes into bite-size chunks. When the potatoes are soft and cooled, preheat the oven to 350° F.

    2. In a large bowl, blend the sour cream, butter, dill, salt, and pepper and mix well. Gently fold in the potatoes.

    3. When all the potatoes are covered in the cream sauce, pour into a 13-by-9-inch baking dish, cover with a layer of bacon, and top with the cheese. Bake for 20 to 25 minutes, or until thoroughly heated and bubbly.

      Makes 6 servings
