Creamy Pork Casserole

- 1/2 cup butter
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 cup chopped green bell pepper
- 1/4 cup all-purpose flour
- 1 (14.5-ounce) can beef broth
- 2 cups heavy whipping cream
- 3 cups cooked chopped pork loin
- 1 (15.25-ounce) can niblet corn, drained
- 1 cup shredded mozzarella cheese
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 8 ounces ziti noodles, cooked
- 1 (2.8-ounce) can French fried onions
Instructions
- Preheat oven to 350° F. Lightly grease a 13x9x2-inch baking dish; set aside.
- In a large skillet, melt butter over medium heat. Add onion, garlic and pepper; cook 5 minutes or until tender. Stir in flour, and cook 2 minutes, or until slightly thickened. Stir in pork, corn, cheese, salt and pepper, and cook until bubbly. Stir in cooked noodles.
- Pour mixture into prepared pan. Sprinkle with French fried onions. Bake 25 minutes, or until hot and bubbly.
Makes 4 to 6 servings.
