Lynn's Company Casserole

List of Ingredients
- 1 Tbsp butter or margarine
- 1 lb. ground chuck
- 2 (8-oz.) cans tomato sauce
- 1 cup cottage cheese
- 1 (8-oz.) pkg. cream cheese, softened
- 1/4 cup sour cream
- 1/4 cup snipped scallions
- 1 Tbsp minced green pepper
- 4 cups medium noodles, cooked and drained
- 2 Tbsp butter or margarine, melted
Instructions
- In skillet, melt 1 tablespoon butter. Saute ground chuck until browned. Drain. Stir in tomato sauce.
- Combine cottage cheese, cream cheese, sour cream, scallions, and green pepper.
- Spread half of noodles in 2-quart casserole dish. Cover with cheese mixture. Cover with remaining noodles. Pour melted butter on top. Spoon on ground chuck mixture. Chill.
- About 1 hour before serving time, preheat oven to 375 degrees. Bake casserole 45 minutes, or until heated through.
Variation: You may bake immediately. Bake for 30 minutes, or until heated through, at 375 degrees.
