    Scalloped Potato and Ham Casserole

    List of Ingredients


    • 1 stick butter
    • 1/3 cup all-purpose flour
    • 3 cups milk
    • 3 cups shredded Cheddar cheese
    • 4 cups diced cooked ham
    • Salt and pepper
    • 5 cups peeled and thinly sliced waxy potatoes, such as a thin-skinned red or white
    • 1 medium onion, diced
    • 1 medium green bell pepper, seeded and diced


    Instructions


    1. Preheat oven to 350° F. Grease a large 9- x 13-inch baking dish.

    2. Melt butter in a medium saucepan over medium heat. Stir in flour to make a paste and cook for 1 minute, stirring constantly. Stir in milk and cook until thick, about 2 minutes. Stir in cheese, and cook until melted. Add ham, and season to taste with salt and pepper.

    3. Combine potatoes, onion and bell pepper in a large bowl. Pour in the sauce, and mix well. Transfer to the baking dish, and cover. Bake for 90 minutes, or until potatoes are tender, removing the cover after the first 30 minutes. Cool for 15 minutes before serving.

      Makes 6 to 8 servings.
