Zucchini Cheese Casserole

List of Ingredients
- 3 medium zucchini, sliced
- 1/2 cup chopped onion
- 2 Tbsp olive oil
- 1 (16-ounce) tub lowfat cottage cheese
- 1 tsp basil
- 1/2 tsp oregano
- 2 tomatoes, sliced
- 1/3 cup Parmesan cheese
Instructions
- Saute zucchini and chopped onion in oil.
- Whip cottage cheese with basil and oregano in blender.
- Place alternating layers of zucchini, cottage cheese and tomato in a 1-1/2-quart casserole dish. Top with Parmesan cheese. Bake, uncovered, at 350 degrees (F) for 25 to 30 minutes.
Makes 4 servings.
