Zucchini Cheese Casserole

List of Ingredients



• 3 medium zucchini, sliced
  
• 1/2 cup chopped onion
  
• 2 Tbsp olive oil
  
• 1 (16-ounce) tub lowfat cottage cheese
  
• 1 tsp basil
  
• 1/2 tsp oregano
  
• 2 tomatoes, sliced
  
• 1/3 cup Parmesan cheese
  






Instructions



1. Saute zucchini and chopped onion in oil.
   
   
2. Whip cottage cheese with basil and oregano in blender.
   
   
3. Place alternating layers of zucchini, cottage cheese and tomato in a 1-1/2-quart casserole dish. Top with Parmesan cheese. Bake, uncovered, at 350 degrees (F) for 25 to 30 minutes.
   
   Makes 4 servings.
