    Dutch Apple Schnapps Cheesecake

    List of Ingredients


    • -- Cinnamon Crust --
    • 1-1/4 cups graham cracker crumbs
    • 1/4 cup sugar
    • 1/3 cup ground walnuts or pecans
    • 1/3 cup butter, melted
    • 1 tsp cinnamon
    • .
    • -- Filling --
    • Four 8-ounce packages softened cream cheese
    • 1 cup sugar
    • 3 Tbsp apple Schnapps (or brandy or apple juice)
    • 1 tsp ground cinnamon
    • 1/2 tsp vanilla
    • 1/8 tsp nutmeg
    • 4 eggs
    • 1 cup chunky-style applesauce
    • 1/4 cup whipping cream


    Instructions


    1. For the crust: Mix all ingredients and press onto the bottom and up the sides of a 10-inch springform pan. Bake at 350º F for 10 minutes. Allow to cool while making the filling.

    2. For the filling: Preheat the oven to 350º F. Beat cream cheese until smooth. Gradually add sugar. Add schnapps, cinnamon, vanilla and nutmeg, and mix. Add eggs, one at a time, beating gently until combined. Stir in applesauce and cream. Pour into cooled crust. Bake about 50 minutes or until nearly set.

    3. Remove cheesecake from oven; sprinkle the crumb topping (recipe follows) over the cheesecake. Return cheesecake to oven and bake another 10 to 15 minutes, or until set. Cool 5 minutes. Run knife around edge of pan; loosen rim. Cool 30 minutes. Remove rim, cover and refrigerate.

      CRUMB TOPPING

      3/4 cup brown sugar
      3/4 cup all-purpose flour
      1/3 cup melted butter
      1/2 tsp cinnamon
      1/4 tsp nutmeg

      Mix ingredients until mixture forms coarse crumbs.
