    Iron Door Chili

    List of Ingredients


    • 1 lb. stew beef, cut into 1-inch pieces
    • 2 stalks celery, chopped
    • 1 medium onion, peeled and chopped
    • 4 cloves garlic, peeled and chopped
    • 2 Tbsp vegetable oil
    • 2 Tbsp chili powder
    • 1 tsp dried oregano leaves
    • 1/4 tsp ground cinnamon
    • 4 cups cooked pinto beans with cooking liquid (or two 16-ounce cans)
    • 1 (29-ounce) can chopped tomatoes
    • One (4-ounce) can chopped green chilies
    • Salt to taste
    • .
    • Chopped onion and grated cheese, optional


    Instructions


    1. In a large stew pot over medium-high heat, cook beef, celery, onion and garlic in oil for 5 minutes. Add chili powder, oregano and cinnamon, and cook 1 minute longer.

    2. Add beans, tomatoes and green chilies and bring all ingredients to a boil. Cover, reduce heat to low and simmer for 45 minutes, stirring occasionally.

      Serve hot with chopped onion and grated cheese, if desired.

      Serves 6
