    Kathouse Green Chili

    List of Ingredients


    • 1 lb. hot green chiles, chopped
    • 1 lb. mild green chiles, chopped
    • 2 onions, minced
    • 3 cloves garlic, minced
    • 2 jalapenos, minced
    • 1/2 lb. tomatillos
    • 1/4 cup cilantro
    • 4 lbs pork, cubed
    • Salt and pepper
    • Oil
    • 4 cups chicken broth
    • 2 bay leaves
    • 1 tsp oregano
    • 2 Tbsp cumin


    Instructions


    1. Chop chiles, onions, garlic, jalapenos, tomatillos and cilantro. Saute onions and garlic in pot. Brown pork with salt and pepper in oil in a separate pot.

    2. Add browned pork to pot with onions and garlic. Add chicken broth, bay leaves, hot and mild chiles, jalapenos, tomatillos, oregano and cumin. Cover and simmer.

    3. A half an hour before serving, remove bay leaves and add chopped cilantro. Add salt to taste.

      Makes 2 quarts.
