    Rhinestone Cowboy Chili

    List of Ingredients


    • 1/2 lb. dry pinto beans
    • 5 cups canned, peeled tomatoes
    • 1 lb. green bell peppers, seeded and coarsely chopped
    • 1-1/2 lbs. onions, peeled and coarsely chopped
    • 2 garlic cloves, crushed
    • 1-1/2 Tbsp olive oil
    • 1/2 cup parsley, minced
    • 2-1/2 lbs. ground beef
    • 1 lb. ground lean pork
    • 1/3 cup chili powder
    • 2 Tbsp salt
    • 1-1/2 tsp pepper
    • 1-1/2 tsp cumin seeds


    Instructions


    1. Soak pinto beans overnight in cold water in a large chili pot. Cover beans with fresh cold water and simmer for 2 hours.

    2. Saute green bell peppers, onions, garlic, and parsley in olive oil. Add pork and hamburger; brown. Add spices and cook for 10 minutes. Combine with beans and cook, covered, for one hour.

    3. Uncover and cook for 30 minutes longer (add water if needed).

      Yield: 4 quarts
