    Smoky Hot Beef Chili

    • -- For the Chili --
    • 1 Tbsp oil
    • 3/4 lb. beef sirloin, cut into 1-inch pieces
    • 1 cup chopped onions
    • 1 medium green bell pepper, seeded and chopped
    • 2 garlic cloves, crushed
    • 2 (28-oz.) cans Italian plum tomatoes, undrained, cut-up
    • 1 tsp salt
    • 1 tsp Liquid Smoke
    • 1/2 tsp pepper
    • *
    • -- Topping --
    • 1 avocado, peeled, pitted and chopped
    • 1 tsp lime juice
    • 1/2 cup sour cream


    Instructions


    1. Heat oil in large saucepan or Dutch oven over medium-high heat until hot. Add beef; cook 8 to 10 minutes or until beef is well browned. Stir in onions, bell pepper, and garlic. Cook 4 to 5 minutes or until vegetables are crisp-tender.

    2. Stir in all remaining ingredients (except Topping ingredients). Bring mixture just to a boil. Reduce heat to low; simmer 45 to 55 minutes or until slightly thickened, stirring occasionally.

    3. In a small bowl, combine avocado and lime juice. To serve chili, ladle chili into bowls; top with sour cream and chopped avocado.

      Makes about 6 servings.
