Bacon Cheddar Burgers

- 1½ pounds ground chuck
- 2 Tbsp (¼ stick) unsalted butter
- 2 cloves garlic, minced
- 1 shallot, minced
- ½ tsp chili powder
- ½ tsp smoked or regular paprika
- 5 pieces thinly sliced bacon, cut in ½-inch pieces
- 1 cup shredded sharp or extra sharp Cheddar cheese, plus extra to top the burgers, if desired
- 2 tsp Dijon-style mustard
- Salt and freshly ground black pepper, to taste
Instructions
- Put the ground chuck into a large bowl and break up any chunks by hand.
- Melt the butter in a skillet over low heat, add the garlic and shallot, and cook for 2 minutes, stirring. Add the chili powder and paprika, and cook for 1 minute more, stirring. Add the mixture to the meat, scraping the skillet well.
- Return the skillet to the heat, add the bacon, and cook until crisp, turning often. Transfer to a plate lined with paper towels. Cool, then crumble or chop coarsely. Add the bacon, shredded Cheddar, and mustard to the meat and mix thoroughly by hand. (Do not overwork the meat, or you'll toughen it.)
- Shape the meat into six ¾-inch-thick patties. Salt and pepper each patty, to taste.
- Preheat a grill or skillet over medium-high heat. Cook each patty for 3 minutes per side, or to your liking. Top with additional cheese, if desired, in the final 1 to 2 minutes of cooking.
