Recipe Introduction
This comforting breakfast dish is about as easy as you can get. Eggs cook between a layer of cheese under a savory cloak of bread crumbs, fresh herbs, and bacon. Serve with crusty bread and prepared chutney on the side.
List of Ingredients
◦  2 strips bacon, diced
◦  8 ounces Gruyère cheese, coarsely shredded
◦  4 eggs
◦  1 teaspoon chopped fresh chives
◦  Ground pepper
◦  ¼ cup fresh bread crumbs
Recipe
Preheat the oven to 300° F. Butter a small baking dish.
In a frying pan over medium-high heat, fry the bacon until crisp, about 5 minutes; drain on paper towels and set aside.
Spread half of the cheese in the prepared baking dish. Break the eggs over the cheese, spacing them evenly. Sprinkle the eggs with the cooked bacon and chives, and cover with the remaining cheese. Season with pepper and sprinkle with the bread crumbs.
Bake until the eggs are lightly set, about 15 minutes. The crumbs should be lightly browned; if they're not, slide the dish under the hot broiler for 1 or 2 minutes. Serve right away.
