From "Comfort Food Shortcuts" by David Venable
List of Ingredients
- 1 Tbsp kosher salt
- 1 16-ounce box ziti
- 2 Tbsp olive oil
- 1 cup chopped yellow onions
- 4 cloves garlic, minced
- 2 tsp dried basil
- ½ tsp red pepper flakes
- 4 cups jarred marinara sauce
- 4 cups (1 pound) shredded mozzarella
- ½ cup (2 ounces) grated Parmigiano-Reggiano
- ¼ cup chopped fresh parsley leaves
Instructions
- Bring a large pot of water to a boil and add the salt. Add the ziti and cook, stirring until tender but still firm to the bite. Drain the ziti in a colander.
- Heat the oven to 350° F. Heat the oil in a large pot over medium heat. Add the onions, garlic, basil, and red pepper flakes. Cook until the onions are translucent, 5 to 6 minutes, stirring occasionally.
- Stir in the marinara sauce, reduce the heat to low, and cook for 5 minutes. Remove the sauce from the heat, add the cooked ziti, and stir until coated.
- Pour half of the ziti mixture into a 9 x 13-inch baking dish, then evenly sprinkle on 2 cups of the mozzarella and ¼ cup of the Parmigiano-Reggiano. Repeat with the remaining ziti mixture, mozzarella, and Parmigiano.
- Bake until the casserole is heated through and the cheese is melted, 35 to 40 minutes. Remove from the oven, sprinkle the parsley on top, and let the casserole sit for 5 to 10 minutes before serving.
