    Cozy Chicken Pot Pie

    Recipe Introduction

    "One of my favorite comforting dishes is this chicken pot pie. It's hearty, warm, and absolutely perfect for winter parties and dropping off to friends and neighbors. Give the presentation some flair by making initials out of puff pastry to serve as place cards for your guests! Hint: If you have little ones hopping around to help in the kitchen, let them cut out shapes from the extra puff pastry—it'll keep them busy while you prep."

    List of Ingredients

    â—¦ 4 tablespoons butter
    â—¦ 1 cup peeled and sliced (¼-inch thick) carrots
    â—¦ 1 small onion, chopped
    â—¦ 1 ½ cups baby portobello mushrooms, wiped, stems removed and quartered
    â—¦ ½ cup chopped celery
    â—¦ 2 cloves garlic, minced
    â—¦ ½ cup white wine
    â—¦ â…“ cup all-purpose flour
    â—¦ 4 cups chicken broth
    â—¦ 1 cup green peas
    â—¦ ¾ cup whipping cream
    â—¦ 1 teaspoon chopped fresh rosemary
    â—¦ 2 teaspoons chopped fresh parsley
    â—¦ 1 teaspoon salt
    â—¦ ½ teaspoon black pepper
    â—¦ 4 cups shredded or cubed cooked chicken
    â—¦ 2 sheets frozen puff pastry, thawed
    â—¦ 1 egg, beaten

    Recipe

    Preheat the oven to 400 degrees.

    In a Dutch oven or ovenproof pot, melt butter and sauté carrots and onion over medium heat until tender, 5 minutes, stirring frequently. Add mushrooms and celery. Cook for an additional 5 minutes. Stir in garlic and wine then cook for an additional minute. Add flour and stir well. Pour in chicken broth and bring to boil. Cook, stirring frequently, until sauce has thickened enough to coat the back of a spoon, 5 to 7 minutes. Remove from heat and stir in peas, whipping cream, rosemary, parsley, salt, pepper, and chicken.

    Roll out one puff pastry sheet and cut to fit top of pot. You may also top your chicken pot pie in a lattice pattern by cutting strips of puff pastry and assembling on top. Brush puff pastry with egg. Bake for 40 to 45 minutes or until puff pastry is golden. Cover loosely with aluminum foil if puff pastry starts to get too brown.

    If making miniature pot pies, transfer chicken pot pie filling to individual ramekins and top with puff pastry cut to fit top of ramekin. Bake individual pot pies for 20 to 25 minutes or until puff pastry is golden.

    Roll out second sheet of puff pastry. Use 2- to 3-inch alphabet-shaped cookie cutters to cut out the first initial of each of your guests. Lay the puff pastry letters on a baking sheet and brush with egg. Bake at 400 degrees for 12 to 15 minutes or until lightly golden. Before serving, place the puff pastry initial on each individual pot pie.

    Makes 6 to 8 servings




    • Tip:
    Instead of traditional flowers, think outside the box and place mini herb arrangements (such as mint, rosemary, or basil) at each guest's place setting. It makes the perfect party flavor, and the fragrance of the herbs creates a delightful atmosphere.
