    Creamy Rice Pudding

    List of Ingredients

    â—¦ 1 quart milk
    â—¦ 1 cup uncooked medium-grain rice
    â—¦ ½ teaspoon salt
    â—¦ 1 ½ teaspoons vanilla extract
    â—¦ 4 egg yolks, beaten
    â—¦ ½ cup sugar
    â—¦ ½ cup half-and-half
    â—¦ 1 teaspoon ground cinnamon
    â—¦ 1 cup raisins

    Recipe

    Combine first four ingredients in a medium saucepan. Cover and cook over low heat about 40 minutes or until rice is tender, stirring occasionally.

    Combine egg yolks and next three ingredients in a small bowl. Gradually stir about one-fourth of hot mixture into yolk mixture; add yolk mixture to remaining hot mixture.

    Cook over low heat, stirring constantly, until mixture reaches 160° F and is thickened and bubbly (about 3 minutes). Stir in raisins. Serve warm or chilled.

    Makes 10 servings
