    Grandma's Homemade Potato Soup

    Recipe Introduction

    "An old-fashioned, simple, chunky potato soup like Grandma made, with russet potatoes, onion, butter, evaporated milk, a little flour, and seasoned with salt and pepper."

    List of Ingredients

    ◦  2 pounds russet potatoes, peeled, cut into 1½-inch chunks
    ◦  ½ cup chopped onion
    ◦  3 tablespoons all-purpose flour
    ◦  Kosher salt and black pepper to taste
    ◦  ½ to 1 stick salted butter
    ◦  Water to cover
    ◦  One 12-ounce can evaporated milk
    ◦  Shredded cheese, for garnish (optional)

    Recipe

    Toss potatoes and onion with flour, salt, and pepper; set aside for about 10 minutes.

    Melt butter in a Dutch oven or soup pot. Add potato mixture; stir to coat. Add enough water to cover potatoes, and bring to a boil. Stir in milk, reduce to simmer, and cook, uncovered, stirring occasionally, 25 to 30 minutes, or until potatoes are tender.

    Taste, adjust seasoning, and continue to simmer, uncovered, until the soup reaches desired consistency and thickness. Garnish each serving with shredded cheese, if desired, and serve immediately.

    Makes about 4 servings


    Variation:

    Cheesy Ham and Potato Soup:
    Add 2 cups cubed smoked ham with potatoes. Just before serving, stir in 1½ cups shredded Cheddar cheese, just until melted. Use an immersion blender or potato masher to purée potatoes if a smoother texture is desired.
