Ham and Noodle Casserole

- 8 ounces wide egg noodles
- 2 to 3 cups diced baked or smoked ham
- 1 cup frozen peas
- 1 cup milk or half-and-half
- 2 large eggs, beaten
- 4 scallions, chopped
- ½ teaspoon salt, or to taste
- ½ teaspoon black pepper, or to taste
- 1½ cups shredded Cheddar or Swiss cheese (about 6 ounces)
- 2 tablespoons butter, melted
Instructions
- Preheat the oven to 350° F. Grease a 2-quart baking dish.
- Cook the noodles in a large pot of boiling salted water until just done, about 10 minutes. Drain well.
- Combine the noodles, ham, and peas in the baking dish. Whisk together the half-and-half and eggs in a small bowl. Mix in the scallions, salt, and pepper. Pour over the ham and noodles. Sprinkle with the cheese and drizzle with the melted butter.
Bake for 45 minutes and serve hot.
