    Mama's Fried Chicken

    List of Ingredients


    • 2 (3- to 4-pound) whole chickens, cut into pieces
    • 2 tsp salt
    • 2 tsp black pepper
    • 4 cups whole buttermilk
    • Self-rising flour
    • Vegetable oil
    • Hot sauce (optional)


    Instructions


    1. Sprinkle the chicken evenly with the salt and pepper. Place each chicken in a shallow dish or large ziplock plastic bag, and add 2 cups of buttermilk to each dish or bag. Cover or seal, and chill at least 2 hours.

    2. Remove the chickens from the buttermilk, discarding the buttermilk. Dredge the chicken in the flour.

    3. Pour the oil to a depth of 1½ inches in a deep skillet or Dutch oven; heat to 360°F. Add half of the chicken, a few pieces at a time, and then cover and cook 6 minutes. Uncover the chicken, and cook 9 minutes. Turn the chicken; cover and cook 6 minutes. Uncover and cook 5 to 9 minutes, turning the chicken the last 3 minutes for even browning, if necessary. Drain on paper towels. Repeat the process with the remaining chicken. Serve warm with the hot sauce, if desired.


      Serves 8 to 10
