â—¦ 2 Tbsp butter
â—¦ 5 cups mixed mushrooms
â—¦ 1 small onion, peeled and sliced into thin strips
â—¦ Zest of 1 lemon
â—¦ Juice of ½ lemon
â—¦ ½ cup heavy cream
â—¦ Sea salt, to taste
â—¦ Pepper, to taste
â—¦ Loaf of crusty bread
â—¦ Chopped parsley, to garnish
Recipe
Melt the butter in a cast-iron skillet over medium heat. Add the mushrooms and onion and cook for 10 minutes, or until the mushrooms and onion begin to lightly brown and caramelize.
Add the lemon zest, lemon juice, cream, and a pinch of salt and pepper. Mix together with a spoon. Bring the mixture to a boil before turning off the heat. Let the skillet rest for a few minutes while you slice up that crusty bread.
Garnish the mushrooms with parsley before serving. This dish is best eaten right out of the skillet, using the bread chunks to soak up all that delicious cream.
