Potatoes Gruyère

- ¼ cup (2 ounces) salted butter, melted, plus more softened butter for greasing
- 5 medium-size russet potatoes (about 3 pounds total), peeled and cut into â…›-inch-thick slices
- 1¼ teaspoons kosher salt
- ½ teaspoon black pepper
- 5 cups beef broth
- 4 ounces Gruyère cheese, shredded (about 1 cup)
Instructions
- Preheat the oven to 350° F. Generously butter a 3-quart baking dish.
- Place one-third of the potato slices in a single layer in the prepared dish; drizzle with one-third of the melted butter, and sprinkle with one-third of the salt and one-third of the pepper. Repeat the layers of the potatoes, butter, salt, and pepper twice. Pour in enough broth to cover the potatoes well; reserve any remaining broth to cover the potatoes well; reserve any remaining broth for another use.
- Bake, uncovered, in the preheated oven until tender throughout, about 1 hour. Use a small sharp knife to check for doneness. Remove from the oven, and drain off any excess liquid. Sprinkle with the cheese, and return to the oven. Bake until the cheese is golden brown, about 10 minutes.
