Quintessential Meat Loaf

List of Ingredients
- ¼ cup (½ stick) butter
- 1¼ cups finely chopped onions
- 1 cup finely chopped green bell pepper
- 2 cloves garlic, finely chopped
- 2 large eggs
- ½ cup beef broth
- 1 Tbsp Worcestershire sauce
- 1 tsp hot pepper sauce, such as Tabasco
- 1 Tbsp soy sauce
- 1 pound ground round or other lean ground beef
- ½ pound ground pork
- ½ pound ground turkey
- 1 cup finely crushed saltine crackers
- ½ cup catsup
- 5 thick slices bacon, cut in half
Instructions
- Preheat the oven to 350°F. Lightly grease a loaf pan.
- Melt the butter in a large skillet over medium-high heat. Add the onions, bell pepper, and garlic and sauté until the onions are softened, about 3 minutes. Remove from the heat and cool slightly.
- Whisk together the eggs, broth, Worcestershire sauce, hot pepper sauce, and soy sauce until well blended in a large bowl. Add the sautéed onion mixture, beef, pork, turkey, and cracker crumbs. Mix until well blended; your hands work best.
- Shape into the loaf pan. Spread the catsup over the top of the loaf and arrange the bacon on top of the catsup.
- Bake about 1½ hours or until the juices run clear and the center of the loaf reads 160°F. Pour off the excess fat and let stand for 15 minutes before serving.
