    Quintessential Meat Loaf

    List of Ingredients


    • ¼ cup (½ stick) butter
    • 1¼ cups finely chopped onions
    • 1 cup finely chopped green bell pepper
    • 2 cloves garlic, finely chopped
    • 2 large eggs
    • ½ cup beef broth
    • 1 Tbsp Worcestershire sauce
    • 1 tsp hot pepper sauce, such as Tabasco
    • 1 Tbsp soy sauce
    • 1 pound ground round or other lean ground beef
    • ½ pound ground pork
    • ½ pound ground turkey
    • 1 cup finely crushed saltine crackers
    • ½ cup catsup
    • 5 thick slices bacon, cut in half


    Instructions


    1. Preheat the oven to 350°F. Lightly grease a loaf pan.

    2. Melt the butter in a large skillet over medium-high heat. Add the onions, bell pepper, and garlic and sauté until the onions are softened, about 3 minutes. Remove from the heat and cool slightly.

    3. Whisk together the eggs, broth, Worcestershire sauce, hot pepper sauce, and soy sauce until well blended in a large bowl. Add the sautéed onion mixture, beef, pork, turkey, and cracker crumbs. Mix until well blended; your hands work best.

    4. Shape into the loaf pan. Spread the catsup over the top of the loaf and arrange the bacon on top of the catsup.

    5. Bake about 1½ hours or until the juices run clear and the center of the loaf reads 160°F. Pour off the excess fat and let stand for 15 minutes before serving.

      Serves 8
