    Sweetie Pie's Mac and Cheese

    Recipe Introduction

    "Macaroni and cheese is a classic Southern dish and another one of those foods that everyone has a recipe for. I'm proud to say that mac and cheese is a specialty at Sweetie Pie's, and folks tell me that they come to the restaurant just to eat it, so we must be doing something right. The best mac and cheese uses a mix of different cheeses both tangy and mild. I make mine with evaporated milk, which gets it nice and creamy without becoming too thick or sticky. You can get your mac and cheese all ready up to the baking stage if you want to do it ahead of time — then you just pop it in the oven when dinnertime's approaching."

    List of Ingredients

    ◦  1 tablespoon salt
    ◦  2 cups small elbow macaroni
    ◦  1 (12-ounce) can evaporated milk
    ◦  2 large eggs
    ◦  ⅓ cup sour cream
    ◦  4 tablespoons (½ stick) unsalted butter, cut into pieces
    ◦  4 tablespoons margarine
    ◦  ⅓ pound shredded sharp Cheddar cheese
    ◦  ⅓ pound shredded Colby Jack cheese
    ◦  ½ pound cubed Velveeta
    ◦  ¼ teaspoon ground black pepper
    ◦  ¼ teaspoon ground white pepper
    ◦  1 tablespoon sugar
    ◦  ¼ cup whole milk
    ◦  ⅓ pound shredded mild Cheddar cheese or American cheese for topping

    Recipe

    Preheat the oven to 375° F and grease a 3-quart casserole dish with butter or cooking spray.

    In a large saucepan, bring 6 cups of water to a boil and add the salt. Add the macaroni and cook according to package directions. Drain into a strainer and run cold water over it for a few minutes to cool.

    In a medium bowl, beat together the evaporated milk, eggs, and sour cream.

    Pour the cooled macaroni into the casserole dish and stir in the evaporated milk mixture. Add the butter, margarine, sharp Cheddar cheese, Colby cheese, Velveeta, sugar, black pepper, and white pepper. Slowly add the milk, stirring well as you pour. Pack down the mixture into a casserole dish and top it with the mild Cheddar cheese.

    Place in the oven and bake for 20 to 25 minutes, until the cheese is melted and lightly browned.


    Serves 4
