    Sweetie Pie's Meatloaf

    Recipe Introduction

    "Meatloaf goes with nearly everything — mashed potatoes, creamed peas, salad, greens, fried corn, rice, Brussels sprouts... the list goes on. Because I like to use the drippings from my meatloaf in the tomato sauce that I spread on top of it, I cook it as a freeform loaf rather than in a loaf pan, which makes the topping shiny and smooth. Serve with mashed potatoes."

    List of Ingredients

    ◦  2 pounds 80% lean ground beef
    ◦  6 tablespoons onion soup mix
    ◦  2 small onions, minced
    ◦  2 small green bell peppers, cored, seeded, and minced
    ◦  10 saltines, crushed
    ◦  ½ cup milk
    ◦  2 large eggs
    ◦  1 tablespoon all-purpose flour
    ◦  1 teaspoon salt, plus more to taste
    ◦  ½ teaspoon ground black pepper, plus more to taste
    ◦  4 cups tomato sauce
    ◦  3 tablespoons sugar

    Recipe

    Preheat the oven to 400° F.

    In a large bowl, mix together the ground beef, onion soup mix, onions, and bell peppers. Soak the saltines in the milk until they become mushy, then add them to the beef mixture. Using your hands, mix everything together very well, then add the eggs, flour, salt, and pepper and knead the mixture with your hands.

    In a small bowl, combine the tomato sauce and sugar and season with salt and pepper.

    Lightly spray a large baking sheet with cooking spray and form the meat mixture into a wide, even loaf.

    Bake for 30 minutes, then remove 3 tablespoons of the drippings from the pan and add it to the tomato sauce mixture. Spread the tomato sauce mixture over the top and sides of the meatloaf and bake for another 15 minutes. Serve with mashed potatoes and creamed peas.
