Three-Cheese Pasta Bake

- 3 cups uncooked penne pasta
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- 1½ cups milk
- ½ cup half-and-half
- 1 cup (4 ounces) shredded white Cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 cups (8 ounces) shredded Gruyère, divided
- 1 tsp salt
- ¼ tsp pepper
- Pinch of grated nutmeg
Instructions
- Preheat oven to 350°F. Prepare pasta according to package directions.
- Meanwhile, melt butter in a saucepan over medium heat. Whisk in flour until smooth; cook, whisking constantly, 1 minute. Gradually whisk in milk and half-and-half; cook, whisking constantly, 3 to 5 minutes or until thickened. Stir in Cheddar cheese, Parmesan cheese, 1 cup Gruyère, and next three ingredients until smooth.
- Stir together pasta and cheese mixture; pour into a lightly greased 11- x 7-inch baking dish. Top with remaining 1 cup Gruyère cheese. Bake, uncovered, at 350°F for 15 minutes or until golden and bubbly.
Makes 4 servings
Final Comments
To make ahead, proceed with recipe as directed, but don't top with the remaining Gruyère cheese. Cover and chill up to 8 hours. Let stand at room temperature 30 minutes. Bake at 350°F for 15 minutes or until bubbly. Increase oven temperature to 400°F. Top with remaining Gruyère; bake 10 more minutes or until golden.
