Classic Homemade Mayonnaise

- 2 pasteurized egg yolks
- 1 teaspoon water
- 1 teaspoon white wine vinegar
- 1 teaspoon fresh lemon juice (from 1 lemon)
- ½ teaspoon kosher salt
- ¼ teaspoon onion powder
- ¼ teaspoon Dijon mustard
- ¼ teaspoon hot sauce
- â…› teaspoon granulated sugar
- 1 cup canola oil
Instructions
- Beat the egg yolks, water, vinegar, lemon juice, salt, onion powder, mustard, hot sauce, and sugar with an electric mixer at high speed, using the whisk attachment, 15 seconds or until combined.
- With the mixer running, add the oil in a very slow, steady stream, beating until the mixture is smooth and thickened.
Add additional water, 1 teaspoon at a time, to thin as desired. Refrigerate up to three days.

• Note:
Aside from the freshest eggs and the painstakingly slow addition of oil to the egg yolk mixture, the trick to foolproof homemade mayonnaise is that seemingly boring teaspoon of water mixed into the yolks at the very start. It is key to stabilizing the emulsion.
