    Dill Pesto

    From "Pesto," by Lou Seibert Pappas


    List of Ingredients


    • 1-1/2 cups packed fresh dill leaves
    • 1/2 cup packed fresh Italian flat-leaf parsley
    • 2 Tbsp walnuts, pistachios or pine nuts
    • 2 large cloves garlic, peeled and smashed
    • 3 Tbsp olive oil
    • 2 Tbsp freshly grated Parmesan or Romano cheese


    Instructions


    1. In a food processor fitted with a steel blade, place dill, parsley, nuts and garlic. Process until finely minced.

    2. Add oil and cheese and process until mixed in. Transfer to a small bowl, cover and chill.

      Makes about 3/4 cup.
