Green Tomato Relish

Recipe Introduction
"If you have access to a couple pounds of green tomatoes come fall, making this relish is a great way to put them to work for you. Use this relish like you would cucumber relish, and slather it on sandwiches, use it in dipping sauces, or save it for hot dogs."
List of Ingredients
◦ 2 pounds green tomatoes, diced
◦ cup diced green bell pepper
◦ cup diced onion
◦ 2 tablespoons pickling salt
◦ 1 cup white vinegar
◦ cup sugar
◦ 1 teaspoons celery seed
◦ 1 teaspoons mustard seed
Recipe
In a nonreactive pot, combine the tomatoes, pepper, onion, and pickling salt. Let stand at room temperature for 4 hours. Bring the vegetables to a boil and simmer for 5 minutes. Drain the vegetables in a sieve or fine strainer, pressing out as much of the liquid as possible. Return them to the pot.
In another nonreactive pot, combine the vinegar, sugar, celery seed, and mustard seed. Bring this mixture to a boil, reduce the heat, and simmer for 5 minutes. Pour this liquid over the vegetables and bring the mixture to a boil. Reduce the heat and simmer for 5 more minutes.
Ladle the relish into jars, leaving inch of headspace. Cap the jars using two-piece canning lids, and process in a boiling-water bath for 10 minutes.
Makes 5 half-pints

Green tomatoes are not typically sold at stores. If you don't grow tomatoes yourself, ask someone who does. Many people simply discard or compost these instead of eating them and are often more than happy to give them away.
