    Sun-Dried Tomato Mayonnaise

    List of Ingredients


    • 1/4 cup sun-dried tomatoes, shredded or finely snipped
    • 1 to 2 tsp lemon juice
    • 1 clove garlic, minced or pressed
    • 1 cup mayonnaise (reduced fat works fine)


    Instructions


    1. Place tomatoes in a small bowl and barely cover with boiling water. Cover with a plate and let sit for 30 minutes. (This step can be done ahead; refrigerate if tomatoes will sit for more than a half-hour.)

    2. In a blender, combine shredded tomatoes with lemon juice and garlic, and puree. Add water if needed, 1 teaspoon at a time. Fold puree into mayonnaise and serve. Refrigerate any leftovers.

      Makes about 1-1/2 cups.
