Black and White Cookie S'mores

- ¾ cup butter
- 12 (1-ounce) squares semisweet chocolate, chopped
- 1½ cups sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1¾ cups all-purpose flour
- ¾ cup graham cracker crumbs
- 1½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 2 cups white-chocolate morsels
- 1 (7-ounce) jar marshmallow crème
Instructions
- Line baking sheets with parchment paper.
In a medium bowl, combine butter and semisweet chocolate. Microwave on High in 30-second intervals, stirring between each, until chocolate is melted and smooth (about 1½ minutes total). Let cool slightly.
- In a large bowl, combine sugar, eggs and vanilla. Beat at medium speed with an electric mixer until fluffy. Beat in butter mixture.
- In a medium bowl, combine flour, graham cracker crumbs, baking powder, baking soda, and salt. Gradually add to sugar mixture, beating until combined. Stir in white chocolate morsels. Wrap dough in heavy-duty plastic wrap; chill for 1 hour.
- Preheat oven to 325° F.
Roll dough into 1½-inch balls. Place dough 3 inches apart on prepared baking sheets. Bake for 12 to 15 minutes, or until edges of cookies are dry. Let cool on pans for 2 minutes. Remove from pans and cool completely on wire racks.
- Spread 2 teaspoons marshmallow crème on flat side of half of cookies. Cover with flat side of remaining cookies to make cookie sandwiches.
Makes 28 to 30 cookies.
