    Butterscotch Icebox Cookies

    From "Sunday Dinner at Grandma's" (Gooseberry Patch)

    List of Ingredients


    • 1 cup butter, softened
    • 2 cups brown sugar, packed
    • 2 eggs
    • 1 tsp vanilla extract
    • 4 cups all-purpose flour
    • 1 tsp baking soda
    • 1 tsp cream of tartar
    • 1 cup chopped walnuts


    Instructions


    1. In a large bowl, blend together butter and brown sugar until light. Add eggs, one at a time, mixing thoroughly. Stir in vanilla. Add dry ingredients and nuts; mix well.

    2. Form into two logs; wrap in wax paper, then in aluminum foil. Refrigerate overnight.

    3. Slice dough ¼-inch thick; place on ungreased baking sheets. Bake at 350° F for 10 to 12 minutes.

      Makes about 4 dozen.
