Butterscotch Oatmeal Cookies

- 1 cup butter, softened
- 1¼ cups firmly packed brown sugar
- ½ cup sugar
- 2 large eggs
- 1 Tbsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 2½ cups quick-cooking oats
- One 11-ounce package butterscotch morsels
- ½ cup finely chopped pecans
Instructions
- Preheat oven to 350° F.
In a large bowl, combine butter and sugars. Beat at medium speed with an electric mixer until fluffy. Add eggs, beating well. Add vanilla, beating until blended.
- In another bowl, combine flour, soda and salt. Gradually add to butter mixture, beating at low speed until blended. Stir in oats and remaining ingredients.
- Drop by rounded teaspoonfuls onto lightly greased baking sheets. Bake for 8 to 10 minutes, or until lightly browned. Transfer to wire racks to cool.
Makes about 7 dozen.
