    Butterscotch Oatmeal Cookies

    List of Ingredients


    • 1 cup butter, softened
    • 1¼ cups firmly packed brown sugar
    • ½ cup sugar
    • 2 large eggs
    • 1 Tbsp vanilla extract
    • 2 cups all-purpose flour
    • 1 tsp baking soda
    • ½ tsp salt
    • 2½ cups quick-cooking oats
    • One 11-ounce package butterscotch morsels
    • ½ cup finely chopped pecans


    Instructions


    1. Preheat oven to 350° F.
      In a large bowl, combine butter and sugars. Beat at medium speed with an electric mixer until fluffy. Add eggs, beating well. Add vanilla, beating until blended.

    2. In another bowl, combine flour, soda and salt. Gradually add to butter mixture, beating at low speed until blended. Stir in oats and remaining ingredients.

    3. Drop by rounded teaspoonfuls onto lightly greased baking sheets. Bake for 8 to 10 minutes, or until lightly browned. Transfer to wire racks to cool.

      Makes about 7 dozen.
