    Chocolate Shortbread Cookies

    List of Ingredients


    • 1 lb. butter (salted)
    • 1-1/4 cups sugar (divided use)
    • 3-1/2 cups flour (divided use)
    • 1 cup unsweetened cocoa
    • .
    • White chocolate (or other chocolate of your choice), melted


    Instructions


    1. In medium bowl, beat together butter and 1 cup of the sugar with electric mixer on medium speed about 1 minute. Add 3 cups of the flour and cocoa and mix at low speed until dough comes together, about 3 minutes.

    2. Blend together 1/2 cup flour and 1/4 cup sugar and mix well. Spread flour-and-sugar mixture on countertop and roll dough out on top of it to about 1/4-inch thickness.

    3. With lightly floured heart-shaped cookie cutter, cut out cookies. Place cookies 1 inch apart on parchment-lined cookie sheets. Refrigerate one hour.

    4. Preheat oven to 300 degrees (F).

    5. Bake cookies 45 minutes, or until firm. Let cookies cool on pans.

      When cookies are completely cool, dip half in white chocolate or chocolate of your choice.
