Chocolate Thumbprint Cookies

- ½ cup plus 1 tsp butter, softened and divided
- 1 cup sugar, divided
- 1 egg yolk
- 2 Tbsp plus 2 tsp milk, divided
- 2¼ tsp vanilla extract, divided
- 1 cup all-purpose flour
- 1/3 cup baking cocoa
- ¼ tsp salt
- ½ cup powdered sugar
- 24 milk chocolate drops
Instructions
- In a small mixing bowl, beat ½ cup butter, 2/3 cup sugar, egg yolk, 2 tablespoons milk, and 2 teaspoons vanilla together until light and fluffy; set aside. Combine flour, cocoa, and salt; add to butter mixture, beating until well blended. Cover and chill one hour.
- Shape dough into 1-inch balls. Roll in remaining 1/3 cup sugar; place on lightly greased baking sheets. Press thumb gently into center of each ball. Bake at 350° F for 10 to 12 minutes.
- While baking, blend together powdered sugar, remaining 1 teaspoon butter, 2 teaspoons milk, and ¼ teaspoon vanilla. When cookies are done, spoon ¼ teaspoon filling into each thumbprint; gently press chocolate drop on top of filling. Remove from baking sheets; cool completely on wire rack.
Makes 2 dozen.
