Classic Chocolate Biscotti

- 2/3 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ¾ tsp baking powder
- 1/8 tsp salt
- ¾ cup chopped and toasted hazelnuts
- ¾ cup semisweet chocolate morsels
Instructions
- Preheat oven to 350° F. Line a baking sheet with parchment paper.
- In a large bowl, combine sugar, eggs, and vanilla. Beat at medium speed with an electric mixer until thick and pale. In a small bowl, combine flour, baking powder and salt. Gradually add to sugar mixture, beating to combine. Stir in hazelnuts and chocolate morsels. Using floured hands, shape mixture into a 3½- x 14-inch log. Bake for 20 minutes. Cool for 10 minutes.
- Using a serrated knife, cut log crosswise into ¾-inch-thick slices. Return slices to baking sheet, cut side down, and bake for 10 minutes. Turn slices over, and bake for 10 more minutes. Remove from pan and cool completely on a wire rack.
Makes about 1½ dozen biscotti.
