    Coconut Jam Fills

    List of Ingredients


    • 1-1/2 cups flour
    • 1 tsp baking soda
    • 1 tsp salt
    • 1-1/2 cups rolled oats
    • 12 Tbsp unsalted butter, at room temperature
    • 1/4 cup packed brown sugar
    • 1 large egg
    • 1/2 tsp vanilla extract
    • 2-1/4 cups flaked coconut, divided
    • About 1/4 cup jam or jelly


    Instructions


    1. Preheat oven to 325 degrees (F). Line cookie sheets with parchment paper.

    2. Stir together the flour, soda, salt and oats. With an electric mixer, beat together the butter and brown sugar until creamy. Beat in the egg and vanilla. Add the flour mixture, beating just until blended. Beat in 1-1/4 cups coconut.

    3. Roll dough in balls the size of a large walnut. Roll in the remaining 1 cup coconut to coat, then place on the cookie sheet. Make a depression in the center of each cookie with your thumb, then fill with about 1/2 teaspoon jam. Bake 20 minutes, until golden. Transfer to racks to cool.

      Makes about 2 dozen cookies.
