Ginger Butter Cookies

- 2/3 cup firmly packed brown sugar
- 1/3 cup sugar
- 1 cup butter, softened
- 1 tsp vanilla
- 2 cups all-purpose flour
- 1 tsp ginger
- 1/2 tsp salt
- 1 (2-oz.) jar finely chopped crystallized ginger (1/3 cup)
- 1/3 cup sugar
Instructions
- Heat oven to 350 degrees (F). In medium bowl, combine brown sugar, 1/3 cup sugar and butter; beat until light and fluffy. Add vanilla; blend well.
- Add flour, ginger and salt; mix well. Stir in crystallized ginger. Shape dough into 1-inch balls; roll in 1/3 cup sugar. Place 2 inches apart on ungreased cookie sheets. Flatten with bottom of glass dipped in sugar.
- Bake at 350 degrees for 7 to 10 minutes or until edges are light golden brown. Cool 2 minutes; remove from cookie sheets.
Makes 3-1/2 dozen cookies.
Final Comments
High-Altitude Adjustments (above 3500 ft.): Decrease brown sugar to 1/2 cup; increase flour to 2-1/4 cups. Bake as directed above.
