    • 2-3/4 cups all-purpose flour
    • 2 tsp baking soda
    • 6-1/2 tsp ground ginger
    • 1-1/2 tsp ground cinnamon
    • 1/2 tsp ground cloves
    • 5 tsp cocoa powder
    • 1/4 tsp salt
    • 1 cup packed brown sugar
    • 1/2 cup canola oil
    • 1/4 cup unsalted butter, melted and cooled
    • 1/4 cup blackstrap molasses
    • 1 large egg

    • 1 Tbsp softened butter
    • 1 cup powdered sugar, sifted
    • About 5 tsp milk


    Instructions


    1. To make the cookies: Stir together the flour, soda, ginger, cinnamon, ground cloves, cocoa powder and salt.

    2. In the large bowl of an electric mixer, combine the brown sugar, oil, melted butter, molasses and egg until well blended. Slowly add the dry ingredients, beating just to blend. Divide the dough in half into flat disks. Place on a plate, cover with wax paper and refrigerate 1 hour.

    3. Preheat oven to 350 degrees (F). Line baking sheets with parchment paper.

    4. On a lightly floured surface, roll half of the dough at a time to 1/4-inch thickness. Cut with a 2-1/2-inch heart-shaped cookie cutter. Place on a prepared baking sheet and bake about 8 minutes, until edges are lightly browned. Transfer to racks to cool. Repeat with the remaining dough. (You can gather the scraps and re-roll the dough.)

    5. To prepare the icing: Cream the softened butter in a bowl. Slowly add the powdered sugar and milk, beating with a spoon until creamy. Transfer the icing to a pastry bag fitted with a plain (1/16-inch) writing tip. Pipe the icing in heart shapes on top of the cooled cookies. Let set up before storing in an airtight container.

      Makes about 44 (2-1/2-inch) cookies.
