    Lemon Almond Cookies

    List of Ingredients


    • 1 stick margarine, softened (do not use butter or spread)
    • 3/4 cup sugar
    • 1 large egg
    • 1 Tbsp freshly grated lemon peel
    • 1-1/2 Tbsp lemon juice
    • 3/4 tsp vanilla extract
    • 1/2 tsp baking powder
    • 1/4 tsp baking soda
    • 1-1/4 cups flour
    • Garnish: 1/2 cup sliced almonds or 1/4 cup sugar


    Instructions


    1. Preheat oven to 350 degrees (F).

    2. Beat butter and sugar in large bowl with mixer on high speed until fluffy. Beat in remaining ingredients, except flour and garnish, until well blended. On low speed beat in flour just until blended.

    3. Drop by rounded teaspoonfuls 1-1/2 inches apart on an ungreased cookie sheet. Sprinkle with almonds or sugar.

    4. Bake 10 to 12 minutes or until edges are lightly browned. Cool on cookie sheet 1 minute before removing to wire rack to cool completely. Store in airtight container at room temperature.

      Makes approximately 44 cookies.
