    Lemon Kisses

    From "Lee Bailey's Soup Meals" by Lee Bailey

    List of Ingredients


    • ½ cup (1 stick) unsalted butter, softened
    • ¾ cup confectioners' sugar
    • 1 large egg yolk
    • Juice and zest of 1 lemon
    • ½ tsp vanilla extract
    • 1½ cups all-purpose flour
    • .
    • -- Topping --
    • Zest of 1 lemon mixed with ¼ cup sugar


    Instructions


    1. Preheat oven to 350° F. Lightly grease a cookie sheet.

    2. Cream the butter and confectioners' sugar until fluffy, about 5 minutes. Mix in yolk thoroughly, then add lemon juice and zest and vanilla. Mix in flour in four portions. Stir well.

    3. Drop by the tablespoonful onto cookie sheet. Top each with a light sprinkling of the lemon zest and sugar. Bake until lightly browned, approximately 12 minutes. Cool on a rack.

      Makes approximately 24 cookies.
