List of Ingredients
- ½ cup (1 stick) unsalted butter, softened
- ¾ cup confectioners' sugar
- 1 large egg yolk
- Juice and zest of 1 lemon
- ½ tsp vanilla extract
- 1½ cups all-purpose flour

- Zest of 1 lemon mixed with ¼ cup sugar
Instructions
- Preheat oven to 350° F. Lightly grease a cookie sheet.
- Cream the butter and confectioners' sugar until fluffy, about 5 minutes. Mix in yolk thoroughly, then add lemon juice and zest and vanilla. Mix in flour in four portions. Stir well.
- Drop by the tablespoonful onto cookie sheet. Top each with a light sprinkling of the lemon zest and sugar. Bake until lightly browned, approximately 12 minutes. Cool on a rack.
Makes approximately 24 cookies.
