    Molasses Ginger Cookies

    List of Ingredients


    • 2 cups all-purpose flour
    • 2 tsp baking soda
    • 1/2 tsp salt
    • 1/2 tsp ginger
    • 1/2 tsp cinnamon
    • 1/4 tsp cloves
    • 1/2 cup butter or margarine, softened
    • 1/4 cup vegetable shortening
    • 1-1/4 cups sugar, divided
    • 1 large egg
    • 1/4 cup light molasses
    • 1/2 tsp grated orange peel *


    Instructions


    1. Heat oven to 350 degrees (F). Whisk flour, baking soda, salt, ginger, cinnamon and cloves in a bowl.

    2. Beat butter, shortening and 1 cup of the sugar in a mixer bowl on medium speed. Add egg, molasses and orange peel; beat 5 minutes, until light and fluffy. Reduce speed to low and add dry ingredients just until combined.

    3. Place the remaining 1/4 cup of sugar in a pie plate. Shape dough into 1-inch balls; roll balls in sugar (dough will be sticky). Place balls 2 inches apart on ungreased cookie sheets. Bake 10 to 12 minutes. Transfer to wire racks; cool.

      Makes 60 cookies.



    Final Comments


    * When grating the orange peel, be sure to use only the colored portion; the white membrane is bitter.
