Molasses Ginger Cookies

List of Ingredients
- 2 cups all-purpose flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ginger
- 1/2 tsp cinnamon
- 1/4 tsp cloves
- 1/2 cup butter or margarine, softened
- 1/4 cup vegetable shortening
- 1-1/4 cups sugar, divided
- 1 large egg
- 1/4 cup light molasses
- 1/2 tsp grated orange peel *
Instructions
- Heat oven to 350 degrees (F). Whisk flour, baking soda, salt, ginger, cinnamon and cloves in a bowl.
- Beat butter, shortening and 1 cup of the sugar in a mixer bowl on medium speed. Add egg, molasses and orange peel; beat 5 minutes, until light and fluffy. Reduce speed to low and add dry ingredients just until combined.
- Place the remaining 1/4 cup of sugar in a pie plate. Shape dough into 1-inch balls; roll balls in sugar (dough will be sticky). Place balls 2 inches apart on ungreased cookie sheets. Bake 10 to 12 minutes. Transfer to wire racks; cool.
Makes 60 cookies.
Final Comments
* When grating the orange peel, be sure to use only the colored portion; the white membrane is bitter.
