Oatmeal Cookies, My Grandmother's

List of Ingredients
- 2-2/3 cups unsalted margarine
- 3-1/2 cups packed dark brown sugar
- 3 eggs
- 3 Tbsp honey
- 1 Tbsp vanilla extract
- 1-1/2 tsp salt
- 4 cups flour
- 2 lbs. old-fashioned rolled oats
- 1 cup dark raisins
- 8 ounces coarsely chopped walnuts
Instructions
- Line baking sheets with parchment paper.
- Cream the margarine and sugar in a very large bowl until smooth. Beat in the eggs, honey, vanilla and salt until smooth and creamy. (This can be done in an electric mixer; transfer to a large bowl.) Using your hands, work in the flour and oats until well combined. Add the raisins and walnuts, mixing well. The dough will be very stiff.
- Shape the cookies into golf-ball-size balls, put on the baking sheet and flatten slightly. (About 16 cookies can be put on one baking sheet at a time.) Bake in a preheated 350° F oven 15 minutes. Transfer to wire racks to cool.
Makes about 60 cookies.
