    Oatmeal Cookies, My Grandmother's

    List of Ingredients


    • 2-2/3 cups unsalted margarine
    • 3-1/2 cups packed dark brown sugar
    • 3 eggs
    • 3 Tbsp honey
    • 1 Tbsp vanilla extract
    • 1-1/2 tsp salt
    • 4 cups flour
    • 2 lbs. old-fashioned rolled oats
    • 1 cup dark raisins
    • 8 ounces coarsely chopped walnuts


    Instructions


    1. Line baking sheets with parchment paper.

    2. Cream the margarine and sugar in a very large bowl until smooth. Beat in the eggs, honey, vanilla and salt until smooth and creamy. (This can be done in an electric mixer; transfer to a large bowl.) Using your hands, work in the flour and oats until well combined. Add the raisins and walnuts, mixing well. The dough will be very stiff.

    3. Shape the cookies into golf-ball-size balls, put on the baking sheet and flatten slightly. (About 16 cookies can be put on one baking sheet at a time.) Bake in a preheated 350° F oven 15 minutes. Transfer to wire racks to cool.

      Makes about 60 cookies.
