Orange Butter Cookies

- 1 cup (½ pound) butter or margarine
- ½ cup sugar
- 1¾ tsp grated orange peel
- 1 large egg
- 1 tsp vanilla
- 1½ cups powdered sugar
- 3 Tbsp orange juice
Instructions
- Beat butter and sugar until creamy and blended. Beat in 1 teaspoon orange peel, egg and vanilla. Gradually mix flour into butter mixture; beat until blended.
- On a lightly floured board, roll out dough to 1/8-inch thick. Cut out with floured decorative cutters (about 2 inches wide), and place slightly apart on lightly greased baking sheets. Gather scraps into a ball, reroll dough, and cut out more cookies. Bake in a 350° oven until pale gold with lightly browned edges, 12 to 15 minutes. Transfer to racks to cool.
- Mix powdered sugar and orange juice until smooth. Stir in remaining orange peel. Spread or brush glaze over cookies; let stand until icing is dry, about 10 minutes.
Makes about 5½ dozen.
Final Comments
Store airtight up to 2 days; separate layers with waxed paper.
