    Peanut Butter-Oatmeal Cookies

    List of Ingredients


    • 1 cup all-purpose flour
    • 1 cup old-fashioned oats (do not use quick)
    • 1/2 tsp baking soda
    • 1/2 tsp cinnamon
    • 1/2 tsp nutmeg
    • 1/4 tsp salt
    • 1/2 cup (1 stick) unsalted butter, softened
    • 1 cup firmly packed brown sugar (either light or dark)
    • 1 cup crunchy peanut butter
    • 1 large egg
    • 1 tsp vanilla extract
    • Optional: 2 Tbsp turbinado sugar


    Instructions


    1. Preheat oven to 325º F.

    2. Combine the flour, oats, soda, cinnamon, nutmeg and salt; set aside. In a large bowl, with an electric mixer on medium speed, combine the butter, brown sugar and peanut butter until creamy. Beat in the egg and vanilla. On low speed, beat in the dry ingredients just until blended. (It is very important that you do not overbeat the dough.)

    3. Drop by rounded teaspoonfuls 2 inches apart on ungreased baking sheets. Sprinkle each cookie with a little of the turbinado sugar, if using. Bake on the middle rack 12 minutes. Let the cookies cool on the baking sheet before transferring to racks.

      Makes about 30 cookies.
