Pistachio and White Chocolate Cookies

- ½ cup (scant) unsalted butter, softened
- 7 Tbsp sugar
- ½ cup (scant) brown sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 cup all-purpose flour
- 1 tsp baking soda
- ½ cup ground pistachios
- 4 ounces whole pistachios
- 4 ounces white chocolate, chopped
Instructions
- Preheat oven to 350° F.
- Beat butter and sugars until soft. Add vanilla and egg, and mix well. Add flour and baking soda, and mix until smooth. Mix in pistachios and white chocolate.
- Form dough into walnut-sized balls and place on parchment-lined baking sheets, leaving ample space between cookies. Bake for 8 to 10 minutes, or until done. Cool on baking sheets for a few minutes. Then remove to wire racks to cool completely.
