    Pistachio and White Chocolate Cookies

    List of Ingredients


    • ½ cup (scant) unsalted butter, softened
    • 7 Tbsp sugar
    • ½ cup (scant) brown sugar
    • 1 tsp vanilla extract
    • 1 large egg
    • 1 cup all-purpose flour
    • 1 tsp baking soda
    • ½ cup ground pistachios
    • 4 ounces whole pistachios
    • 4 ounces white chocolate, chopped


    Instructions


    1. Preheat oven to 350° F.

    2. Beat butter and sugars until soft. Add vanilla and egg, and mix well. Add flour and baking soda, and mix until smooth. Mix in pistachios and white chocolate.

    3. Form dough into walnut-sized balls and place on parchment-lined baking sheets, leaving ample space between cookies. Bake for 8 to 10 minutes, or until done. Cool on baking sheets for a few minutes. Then remove to wire racks to cool completely.
