    Soft Ginger Cookies

    List of Ingredients


    • 4 cups all-purpose flour
    • 1 cup sugar
    • 2 tsp baking soda
    • 2 tsp ground ginger
    • 1 tsp ground nutmeg
    • 1 tsp ground cinnamon
    • 1 tsp ground cloves
    • 1/2 tsp salt
    • 1 cup robust-flavored (dark) molasses
    • 1/2 cup solid vegetable shortening
    • 1 large egg, beaten to blend
    • 1/2 cup boiling water
    • Additional sugar


    Instructions


    1. Combine first 8 ingredients in large bowl. Add molasses, shortening, and egg; beat to blend. Beat in boiling water. Chill 1 hour.

    2. Preheat oven to 400° F. Roll chilled dough by tablespoonfuls into balls. Roll in additional sugar. Space balls 2 inches apart on ungreased baking sheets.

    3. Bake until cookies are puffed and cracked on top, and centers still feel soft, about 12 minutes. Transfer to racks and cool.

      Makes about 40 cookies.
