"Make these cookies once and you'll be sure to keep a spice cake mix on hand for those times when you must have something sweet. Thanks to the mix, these treats are soft, chewy, and cakey on the inside with a warm, brown-sugary coating. I like them with a cup or two of strong coffee."

â—¦ 1 15.25-ounce spice cake mix
â—¦ â…“ cup vegetable oil
â—¦ 2 large eggs
â—¦ 1 teaspoon plus ½ teaspoon pumpkin pie spice
â—¦ â…“ cup (packed) light brown sugar
Recipe
Heat the oven to 350° F. Line two sheet pans with parchment paper.
Put the cake mix, oil, eggs, and 1 teaspoon pumpkin pie spice in the bowl of an electric mixer. Beat on medium speed until a sticky dough forms, about 1 minute. Set aside.
Mix together the brown sugar and the remaining ½ teaspoon pumpkin pie spice in a shallow bowl.
Using a mini ice cream scoop, spoon 2 tablespoons of cookie dough into the bowl with the sugar-spice mixture and gently roll it to coat. Repeat with the remaining dough. Place the cookies 2 inches apart on the prepared sheet pans.
Bake the cookies, rotating the pans halfway through the baking time, until puffed and cracked, 12 to 14 minutes. Remove from the oven and place the sheet pans on a cooling rack. Let the cookies cool before serving.
