Starlight Ginger Cookies

- 6 Tbsp unsalted butter, at room temperature
- 1/2 cup dark brown sugar
- 1/4 cup dark corn syrup
- 1-1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground cardamom
- 1/3 cup whipping cream, whipped
- 2-1/4 cups flour
- 3/4 tsp baking soda

- 1-1/2 cups powdered sugar
- 2 Tbsp milk
- 1/2 tsp white vinegar or lemon juice
Instructions
- To prepare cookie dough: Beat butter, brown sugar, corn syrup, ginger, cinnamon, cloves and cardamom until light and fluffy. Fold in whipped cream until blended.
- Sift together flour and baking soda; gradually stir into butter mixture, forming a soft dough. Turn onto a large sheet of foil, wrap and refrigerate at least 24 hours.
- Divide dough into 6 equal parts. Roll out one part of dough at a time, rolling 1/8-inch-thick on floured board. Chill remaining dough. Cut out cookies with a star-shaped cutter and place on lightly greased baking sheets.
- Bake in a preheated 375-degree oven 10 minutes. Transfer to wire racks to cool.
- To prepare icing: Beat powdered sugar, milk and vinegar or lemon juice with a wooden spoon until smooth. Transfer mixture, 1/3 cup at a time, to a paper decorating cone with a fine tip. Decorate cooled cookies and let sit for 1 hour before storing.
Makes approximately 55 cookies.
