    Starlight Ginger Cookies

    List of Ingredients


    • -- Dough --
    • 6 Tbsp unsalted butter, at room temperature
    • 1/2 cup dark brown sugar
    • 1/4 cup dark corn syrup
    • 1-1/2 tsp ground ginger
    • 1 tsp ground cinnamon
    • 1/4 tsp ground cloves
    • 1/4 tsp ground cardamom
    • 1/3 cup whipping cream, whipped
    • 2-1/4 cups flour
    • 3/4 tsp baking soda
    • .
    • -- Icing --
    • 1-1/2 cups powdered sugar
    • 2 Tbsp milk
    • 1/2 tsp white vinegar or lemon juice


    Instructions


    1. To prepare cookie dough: Beat butter, brown sugar, corn syrup, ginger, cinnamon, cloves and cardamom until light and fluffy. Fold in whipped cream until blended.

    2. Sift together flour and baking soda; gradually stir into butter mixture, forming a soft dough. Turn onto a large sheet of foil, wrap and refrigerate at least 24 hours.

    3. Divide dough into 6 equal parts. Roll out one part of dough at a time, rolling 1/8-inch-thick on floured board. Chill remaining dough. Cut out cookies with a star-shaped cutter and place on lightly greased baking sheets.

    4. Bake in a preheated 375-degree oven 10 minutes. Transfer to wire racks to cool.

    5. To prepare icing: Beat powdered sugar, milk and vinegar or lemon juice with a wooden spoon until smooth. Transfer mixture, 1/3 cup at a time, to a paper decorating cone with a fine tip. Decorate cooled cookies and let sit for 1 hour before storing.

      Makes approximately 55 cookies.
