    Stir 'n' Drop Sugar Cookies

    List of Ingredients


    • 2 large eggs
    • 2/3 cup vegetable oil
    • 2 tsp vanilla
    • 1 tsp grated lemon peel
    • 3/4 cup sugar
    • 2 cups flour
    • 2 tsp baking powder
    • 1/2 tsp salt
    • 2 Tbsp sugar
    • 1/8 tsp nutmeg


    Instructions


    1. Preheat oven to 400º F. Beat the eggs with a whisk. Whisk in the oil, vanilla and lemon peel. Blend in 3/4 cup sugar until the mixture thickens. Combine the flour, baking powder and salt. Blend into the egg mixture.

    2. Combine 2 tablespoons sugar and the nutmeg; spread on a plate. Drop the dough by teaspoonfuls about 2 inches apart on ungreased baking sheets. Flatten with a greased glass bottom dipped in the sugar-nutmeg mixture.

    3. Bake in preheated oven 8 to 10 minutes, until a delicate brown. Transfer the cookies to cooling racks immediately.

      Makes about 58 cookies.
