    Tesuque Pumpkin Cookies

    List of Ingredients


    • 1 cup sugar
    • 1 cup vegetable shortening
    • 1 cup fresh or canned pumpkin purée
    • 1 egg, lightly beaten
    • 1 tsp vanilla extract
    • 2 cups flour
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1/2 tsp grated nutmeg
    • 1/4 tsp ground allspice
    • 1 cup golden raisins
    • 1/2 cup chopped walnuts


    Instructions


    1. In the bowl of an electric mixer, cream together the sugar and shortening. Add the pumpkin, egg and vanilla, beating just to blend.

    2. Sift together the flour, soda, salt, nutmeg and allspice. Slowly add to the pumpkin mixture, beating just to blend. Stir in the raisins and walnuts.

    3. Drop by rounded teaspoons onto greased baking sheets 2 inches apart and bake in a preheated 350º F oven 15 minutes, until golden brown. Transfer to cooling racks.

      Makes about 4 dozen cookies.
