Tesuque Pumpkin Cookies

List of Ingredients
- 1 cup sugar
- 1 cup vegetable shortening
- 1 cup fresh or canned pumpkin purée
- 1 egg, lightly beaten
- 1 tsp vanilla extract
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp grated nutmeg
- 1/4 tsp ground allspice
- 1 cup golden raisins
- 1/2 cup chopped walnuts
Instructions
- In the bowl of an electric mixer, cream together the sugar and shortening. Add the pumpkin, egg and vanilla, beating just to blend.
- Sift together the flour, soda, salt, nutmeg and allspice. Slowly add to the pumpkin mixture, beating just to blend. Stir in the raisins and walnuts.
- Drop by rounded teaspoons onto greased baking sheets 2 inches apart and bake in a preheated 350º F oven 15 minutes, until golden brown. Transfer to cooling racks.
Makes about 4 dozen cookies.
