The Essential Chewy Chocolate Chip Cookie

- ¾ cup (1½ sticks) unsalted butter, softened
- 2/3 cup dark brown sugar, packed
- 2/3 cup granulated sugar
- 2 Tbsp light corn syrup
- 1 Tbsp cider or white vinegar
- 2 large eggs
- 1 Tbsp vanilla extract
- ½ tsp salt
- ½ tsp baking powder
- ¼ tsp baking soda
- 2¼ cups (9½ ounces) unbleached all-purpose flour
- 3 cups (18 ounces) semisweet chocolate chips
Instructions
- Preheat oven to 375° F. Lightly grease (or line with parchment) two baking sheets.
- In a medium-sized mixing bowl, cream together the butter, sugars, corn syrup and vinegar; then beat in the eggs. Beat in the vanilla, salt, baking powder and baking soda; then stir in the flour and chips.
- Drop the dough by the tablespoonful onto the prepared baking sheets. Bake the cookies for 10 minutes, until they're just set; the centers may still look a bit undone. Remove them from the oven and transfer them to a rack to cool.
Makes 4 dozen cookies.
