    The Essential Chewy Chocolate Chip Cookie

    List of Ingredients


    • ¾ cup (1½ sticks) unsalted butter, softened
    • 2/3 cup dark brown sugar, packed
    • 2/3 cup granulated sugar
    • 2 Tbsp light corn syrup
    • 1 Tbsp cider or white vinegar
    • 2 large eggs
    • 1 Tbsp vanilla extract
    • ½ tsp salt
    • ½ tsp baking powder
    • ¼ tsp baking soda
    • 2¼ cups (9½ ounces) unbleached all-purpose flour
    • 3 cups (18 ounces) semisweet chocolate chips


    Instructions


    1. Preheat oven to 375° F. Lightly grease (or line with parchment) two baking sheets.

    2. In a medium-sized mixing bowl, cream together the butter, sugars, corn syrup and vinegar; then beat in the eggs. Beat in the vanilla, salt, baking powder and baking soda; then stir in the flour and chips.

    3. Drop the dough by the tablespoonful onto the prepared baking sheets. Bake the cookies for 10 minutes, until they're just set; the centers may still look a bit undone. Remove them from the oven and transfer them to a rack to cool.

      Makes 4 dozen cookies.
